The Freeze Drying process is one of several techniques for food preservation and is considered one of the best drying methods. This process consists of reducing the temperature of the product to below freezing, and then applying a high-pressure vacuum to extract the water by sublimation. Due to the nature of this process, there is minimal alteration to the physical structure, colour and negligible loss of nutrients. Another benefit, it has excellent rehydration capability due to the development of it's porous texture. For this reason, New Zealand Apple Products have created a range of freeze dried products.

Air Drying is another way of food preservation and has been widely used for this purpose since ancient times. This process removes the water through an evaporation process. New Zealand Apple Products has developed and built tailor-made driers utilizing the latest technology and some old-fashioned inventiveness resulting in what we call our ‘unique drying process,’ to create a variety of products to satisfy everyone’s cravings.
